Blu '61, a sumptuous Italian soft blue cheese made from pasteurized cow's milk, was crafted in 2011 to celebrate the 50th anniversary of its owner, Antonio, and his wife, Giuseppina.
The cheese undergoes over three months of aging, infused with local Raboso Passito IGT wine and cranberries. Its creamy interior and thin, berry-studded red rind make it visually captivating. The cheese offers the classic blue cheese aroma with added sweet, cherry-like scents. Its rich, wine-infused flavor, perfectly complemented by its creamy texture, pairs splendidly with sweet Italian Passito or other dessert wines.
